Fruit Salad


One thing a love about summer is all the good fresh fruit you can find! On Fathers' Day I decided to make a Fruit Salad w/ Black Pepper Dressing (a recipe I found in Rachael Ray's EVERY DAY magazine). Jared was very apprehensive about it (especially when he smelled the dressing cooking..). When he took a second helping of the salad, I knew he liked it. I thought it was really good and adds a little 'fancy" to a not so fancy dish! I'm sharing the recipe!

1 bunch of mint leaves (I made mine without because I forgot to pick some up.)
1/2 c. sugar
1/4 c. balsamic vinegar (hence the apprehension)
1/2 tsp black pepper
2 tsp. corn starch
1/2 honeydew
1/2 cantaloupe
3 large peaches
2 c. strawberries
1 pint raspberries
1. In a small saucepan, combine 1 cup water, half of the mint leaves, the sugar, vinegar and pepper. Bring to a boil, then lower the heat and simmer for 5 minutes.2. In a small bowl, stir together the cornstarch and 4 teaspoons water. Stir into the saucepan and bring to a boil. Remove from the heat and let cool for 10 minutes; strain.3. In a large bowl, toss the dressing with the honeydew, cantaloupe, peaches, strawberries and raspberries. Top with the remaining mint leaves.

Sounds SO GOOD! Now we just need that avocado recipe stuff- it's like crack!

Seriously? You tempt us with a recipe and it's not the avocado salsa? Who does that?
